Carpentras strawberries: flavors of spring

April is the time for the first fruits of spring. We've all been dreaming of them! Here are the first Carpentras strawberries on market stalls or directly from the producers. Sweet and always a joy to savor.

Did you know ? The Carpentras strawberry is a specialty of Comtat Venaissin. Cultivated since the end of the 19th centuryth century, its production was encouraged by the development of the Carpentras canal in 1857, which allowed the irrigation of agricultural land and by the establishment of two railway lines in 1863 and 1894 which opened up new commercial horizons.
Today, Comtat Venaissin is the main strawberry growing area in Provence!

Three main varieties share the stalls

Ciflorette : smaller, with its elongated shape, it is an early variety available at the end of March-beginning of April, with a scent reminiscent of wild strawberries.

The garriguette: also available at the same time, appreciated for its delicate flavor.

The Pajaro : the most widespread, representing almost 80% of the production available until June.

These strawberries are used in various products such as jams, syrups, berlingots, and candied fruits. The Carpentras Strawberry Brotherhood works to preserve and promote this iconic fruit.

Every year in mid-April, the Strawberry Festival takes place. This year, it's scheduled for April 12th. A major event for the city, with very attractive prices and entertainment throughout the day. And even in the evening, with the Strawberry Ball!

An experiment

When you visit one of the Berlingot factories, you might be lucky enough to see a strawberry berlingot being made. You'll be amazed by every step of the process, from the fragrant preparation boiling in the cauldron, to the traditional handling, right up to the master's hand in preparing the sweet white streaks that make this berlingot so special.

Little recipe
Cut some strawberries in half and serve with crushed cardamom or mint leaves for a dessert with the flavors of spring.
